Discover Cecina de León PGI Nieto, a gastronomic treasure
With its deep red colour, distinctive aroma and rich flavours, Cecina de León PGI Nieto holds a special place amongst the finest cured meat specialities.
Made from beef, it is salted, lightly smoked, dried and then matured for a long time. This traditional process gives it its characteristic texture and a rich aroma that appeals to lovers of authentic gourmet products.
A history dating back over 2,000 years
The tradition of Cecina de León has its origins in the ancient meat-preservation practices developed in the north-west of the Iberian Peninsula, even before Roman rule.
During the Roman Empire, the town of Asturica Augusta – now known as Astorga – occupied a strategic position on trade routes. Dried meat was then a food source particularly well-suited to travel and long journeys.
Over the generations, these techniques were refined, giving rise to a speciality deeply rooted in the history and culinary culture of León.
Nieto’s expertise and the Cecina de León PGI guarantee
Nieto’s Cecina de León benefits from Protected Geographical Indication status, a designation that regulates its production and guarantees adherence to the characteristics specific to this speciality.
The selection of beef, salting, light smoking and drying are the various stages of a traditional preparation process that requires time and expertise.
Nieto continues this tradition to produce a cecina prized for its texture and balanced flavours.
A maturation period of at least 12 months
Maturation is an essential stage in the production of Cecina de León. Over a period of at least 12 months, the meat matures slowly and develops increasingly complex flavours.
This maturing process gives it a delicate texture, concentrated flavours and a pleasant lingering finish.
Its slightly smoky notes complement the meat’s aromatic richness without masking its natural flavour.
Why use a slicer to cut Cecina de León?
For the best possible tasting experience, it is advisable to use a slicer to cut Cecina de León into very thin slices.
This method ensures an even cut that highlights the meat’s texture and makes it easier to enjoy. The thin slices also allow you to better appreciate the subtlety of its flavours.
We recommend slicing the cecina just before serving and arranging the slices delicately on a plate.
An ideal speciality for tapas and gourmet platters
Nieto’s Cecina de León is perfect for creating tasting platters, tapas and charcuterie boards.
It can be served with lightly toasted bread, a drizzle of extra virgin olive oil or a few shavings of mature cheese.
For your first taste, however, we recommend savouring it on its own to fully appreciate its aromatic profile.
Our tips for a successful tasting
Serve the Cecina de León at room temperature, cut into very thin slices, to best appreciate its texture and flavours.
Tasting it slowly allows you to gradually discover its aromatic nuances and understand why this traditional speciality has stood the test of time without losing its character.
