What is Pata Negra ham?
The term Pata Negra does not refer to just any Iberico ham. Under Spanish regulations, this designation is reserved for Bellota ham from 100% purebred Iberian pigs.
Both parents of the animal must be 100% Iberian. During the final stage of rearing, known as the montanera, the pigs roam freely through the Spanish dehesa, feeding mainly on acorns (bellotas) as well as grasses, roots and other natural resources.
This combination of Iberian genetics, free-range rearing, natural feeding during the montanera and a long curing process produces a particularly aromatic ham with characteristic intramuscular fat that contributes to its delicate texture and remarkable flavour.
What is the difference between Pata Negra and Bellota ham?
A Pata Negra ham is always a 100% Iberico Bellota ham, but not every Bellota ham is Pata Negra.
The Bellota category also includes hams from pigs with 50% or 75% Iberian ancestry. These are identified by an official red seal, whereas Pata Negra 100% Iberico Bellota carries the official black seal.

The black seal: 100% Iberico Bellota
Spain's official identification system makes it easy to distinguish between the different categories of Iberico ham. Pata Negra ham carries a black seal, reserved exclusively for Bellota hams from 100% purebred Iberian pigs.
The other Iberico categories use different colours: red for 50% or 75% Iberico Bellota, green for Iberico Cebo de Campo ham and white for Iberico Cebo ham.
Why is Pata Negra ham so special?
The exceptional character of Pata Negra 100% Iberico Bellota ham is the result of several factors: genetics, free-range rearing, diet, the natural environment, the producer's expertise and the curing period.
Iberian pigs have a natural ability to develop intramuscular fat. This creates the characteristic marbling visible in the slices and contributes directly to the ham's succulent texture and aromatic complexity.
During the montanera, the pigs roam through the dehesa in search of food, feeding primarily on acorns and natural grasses. The ham subsequently undergoes a long curing and ageing process during which its distinctive aromas, texture and flavour gradually develop.
What does Pata Negra ham taste like?

Cinco Jotas is closely associated with Jabugo in Andalusia, one of Spain's historic centres of Iberico ham production and curing. Its Pata Negra hams are renowned for their marbling, delicate texture and aromatic richness.

For the best flavour and texture, remove the pack from the refrigerator before serving and allow the ham to gradually reach room temperature. The fat will soften and its aromas will become more expressive.
