Which Iberian ham should you choose?
Not all Iberian hams are the same. Their classification depends primarily on the percentage of Iberian breed, the pigs' diet and the way they are reared. These factors directly influence the flavour, texture, marbling and overall characteristics of each ham.
Bellota Iberian ham
Bellota Iberian ham comes from Iberian pigs that spend the montanera, the final stage of their rearing, roaming freely in the dehesas of southwestern Spain. During this period, they feed mainly on acorns, as well as grasses, roots and other natural resources found in the dehesa.
This diet, combined with the Iberian pig's natural ability to develop intramuscular fat, gives the ham its distinctive marbling, succulent texture, intense aromas and long-lasting flavour.
Different categories of Bellota ham are available depending on the percentage of Iberian breed.
100% Iberian Bellota Pata Negra ham
The term Pata Negra is reserved for 100% Iberian Bellota ham. This means that the ham comes from a pure-bred Iberian pig whose parents are also 100% Iberian and that it meets the feeding and rearing requirements established for the Bellota category.
It can be identified by its official black seal, which certifies that the product is 100% Iberian Bellota ham.
This is the highest category under the Spanish Iberian ham quality standard and is renowned for its exceptional marbling, succulent texture, complex aromas and lingering flavour.
Cebo de Campo Iberian ham
Cebo de Campo Iberian ham is an excellent choice for anyone looking to enjoy the distinctive qualities of Iberian pork at a generally more accessible price than Bellota ham.
Cebo de Campo pigs are reared with access to outdoor areas. Their diet is based mainly on feed and cereals, complemented by natural resources available in the countryside.
These hams are identified by an official green seal and offer an excellent balance of quality, flavour and price.
