Description

Protected Designation of Origin: Dehesa de Extremadura

The 100% Iberian bellota Pata Negra Señorio de Montanera ham bears the Dehesa de Extremadura Protected Designation of Origin, one of the leading designations for Iberian ham. This certification guarantees that the pigs are reared and the hams are produced in this historic region of south-western Spain, renowned for the quality of its Iberian products.

The unique terroir of the dehesas

The dehesas of Extremadura form an exceptional ecosystem comprising vast wooded pastures. Iberian pigs roam freely here and feed mainly on acorns during the montanera. This natural diet helps the fat to marble the meat and gives bellota Iberian ham its melt-in-the-mouth texture and rich flavour.

The expertise of Señorio de Montanera

Señorio de Montanera is now one of the leading names in the production of Iberian ham under the Dehesa de Extremadura designation of origin. The company draws on expertise passed down through several generations to produce hams of exceptional consistency and remarkable flavour.

Slow curing in natural cellars

After salting, the hams are slowly cured in natural cellars over a long period. For bellota hams, the curing process generally lasts between 36 and 48 months. This gradual maturation develops a supple texture and a rich, balanced flavour profile.

80 g portion, ready to eat

Hand-sliced and presented in 80-gram portions, this ham is ideal for a gourmet tasting or for creating a high-quality Iberian ham platter. Served at room temperature, it reveals all the finesse and aromatic complexity of bellota Iberian ham.
