Since 2014 the rules of labelling for Iberico ham have changed. The aim is to give the consumer more information so that they know exactly what they are buying.
Currently each ham has a coloured seal. Depending on the colour, we know the characteristics of the ham we buy.
The official seals are as follows:
Black colour: 100% Iberico acorn-fed ham. It is the only one that can be called "Pata Negra". It comes from 100% Iberian breed pigs reared in freedom in certified forests where they eat a lot of acorns. It is the best quality and is more fatty than other Iberian hams.
Red colour: Acorn-fed Iberico ham. It comes from 50% or 75% purebred Iberian pigs reared in the wild in certified forests where they eat a large quantity of acorns. These hams are less fatty than the previous ones.
Green colour: Iberico ham "Cebo de Campo". It comes from 50% to 100% Iberian breed pigs reared in the wild but which only eat herbs, roots and foodstuffs such as cereals.
White colour: Iberico ham "Cebo". It comes from Iberian pigs reared indoors that eat only industrially produced food. Gourmet Madrid does not market these inferior quality Iberian hams.
With all this information you can already be sure that what you really buy is what you get. All the Iberico hams from Gourmet Madrid have the seal that certifies the quality of our Iberian Ham.
