It comes from 100% Iberian breed pigs reared in freedom in the oak and cork forests of southern Spain.
Every pig lives outdoors from October to March. During this time it walks a lot while eating 8 to 10 kgs of acorns.
It completes its diet with herbs and roots that will also add aroma to its fats.
The hams are cured for a period of between 36 and 48 months in cellars. This process is natural as it is done without any mechanical means. The humidity and temperature of the drying rooms is done by opening and closing the windows.
