Gourmet MadridMontesierra 100% acorn-fed Iberian ham, made exclusively from purebred pigs raised in freedom in the Iberian pastures.
The production process begins with the selection of the best animals, naturally fed on acorns and grass, followed by traditional butchering and salting with sea salt.
The ham is cured in traditional cellars for a minimum of 36 months, allowing it to develop its characteristic aromatic complexity and unique fat infiltration. This prolonged resting period in natural temperature and humidity conditions generates the deep aromas and nutty notes that distinguish pata negra ham.
