This rice has the particularity of absorbing well the juices of the paella broth and not sticking.
It is a Japonica variety of rice with round and pearly grains. During cooking it suffers an accordion effect that allows the rice to absorb a lot of flavor but remain loose.
It is considered by experts to be of exceptional culinary quality thanks to its chemical composition that maintains the perfect proportion between amylose and amylopectin. It is grown only in the ecological environment of the Natural Park of l'Albufera (Spain).
Preparation tips:
Recommended for Mediterranean cuisine, especially paella. Four parts water to one part rice. Approximate cooking time 18 minutes.
