The natural curing process for these hams, without mechanical means, takes around 36 months.
The province of Huelva is one of the birthplaces of Iberian ham in Spain. There are huge expanses of forest where pigs live in complete freedom.
For optimal ham quality, grain and water are kept at a distance so that the animals can exercise. This greatly promotes the infiltration of fat into the muscles, resulting in firm and very tasty meat.
