The production area of this ham is located in the province of Granada, in Sierra Nevada, at altitudes between 1200 and 1750. This area has a very dry and very cold climate in winter and hot summers. The microclimate and the purity of the air of Trevelez favor a totally handmade production. No artificial means are used to cure the hams.
