It comes from pigs raised in freedom in the oak and cork forests of southern Spain. 100% Iberian pigs.
Each pig lives outdoors the "montanera" period from October to March. During this time the pigs are looking for food and especially for acorns. They eat about 8-10 kgs of acorns a day.
The diet is completed with herbs and roots that also give the hams and especially their fat a good taste.
The curing process of the hams lasts between 36 and 48 months in cellars. This natural process requires adjusting the temperature and humidity without any mechanical means. This is done only by opening and closing the air and humidity inlets.

This ham has been cut with a knife by professionals. It comes from 100% acorn-fed Iberico ham with the official black seal that guarantees quality. This black seal is on all hams called Pata Negra, which is the best quality.
