The Iberian breed gives exquisite shoulders that are characterized by good infiltrations of fat into their muscles. These fats provide all the flavour to the Iberico shoulder.

Free-range pigs that feed on roots, herbs and cereals in the forests of Andalusia.

Each pig has a lot of space to roam around looking for food, which makes for quality Iberico shoulders.

The Andalusian region is one of the best areas in Spain for breeding and curing Iberico hams and shoulders. It has quality forests and climates very conducive to the drying of hams. Being this climate very dry and with extreme temperatures in both summer and winter.

The curing time of these "Cebo de Campo" Iberian shoulders is about 20 months.

This pallet has the official green seal that certifies that it is an Iberico shoulder "Cebo de Campo".
