All of it comes from 100% Iberian breed pigs raised in freedom in the forests of Andalusia in the province of Huelva. Each pig is fed at least 8 to 10 kg of acorns per day. This gives the meat an excellent flavor.
Curing is done at Cinco Jotastos facilities where they mature naturally.
