An exceptional 100% Iberian bellota ham
The COVAP 100% Iberian bellota ‘Alta Expresión Oro’ Pata Negra boneless half-ham comes from purebred Iberian pigs reared free-range in the dehesas of the Valle de los Pedroches PDO in Andalusia. This Protected Designation of Origin is one of the most prestigious for the production of Iberian ham.
The richness of the dehesas of Valle de los Pedroches
Iberian pigs roam freely across the vast dehesa landscapes, comprising natural pastures and holm oaks and cork oaks. This exceptional environment fosters extensive rearing practices that respect Iberian tradition.
A diet rich in acorns
During the montanera, a crucial period in Iberian rearing, the pigs feed mainly on acorns that have fallen from the oak trees, as well as on natural resources found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This particularly rich diet promotes the marbling of fat within the meat and contributes to the melt-in-the-mouth texture and the rich flavour of bellota Iberian ham.
The expertise of COVAP
COVAP is one of the most renowned producers of high-quality Iberian ham. Located in the heart of the Los Pedroches valley, this cooperative brings together farmers specialising in the production of Iberian pigs and is widely recognised for the excellence of its products.
A long, natural curing process
The hams are slowly cured in natural cellars over several years. This gradual maturation allows a supple texture and a complex flavour profile to develop, with delicate notes of dried fruit characteristic of the finest Iberian hams.
