Boneless half shoulder of Iberian bellota Pata Negra from 100% Iberian Exqium breed.
This shoulder is produced in Andalusia and comes from purebred Iberian pigs that are fed on acorns, grasses and roots.
The production of Exqium Iberian ham and Iberian shoulder has the particularity of not containing additives or nitrites. The only ingredients are the shoulder and salt.
Natural ripening is done with temperature and humidity regulation which is done by opening and closing the windows. This varies between 22 and 28 months depending on the climate of the years and the size of the rooms.

This Exqium boneless half shoulder comes from a farm in Andalusia where each pig has one hectare to eat, acorns, roots and herbs.
These animals are not all alone and are in herds. Which means that 100 pigs will be in 100 hectares of land.

The breed is 100% Iberian and it is therefore a shoulder that has the name of Pata Negra Bellota Shoulder.
The 22 to 28 month maturation is completely natural; no mechanical means are used to refine the shoulders.
The ingredients of this boneless shoulder are: Shoulder and salt. No nitrites and no preservatives.
It is therefore a 100% natural ham.
From breeding to the final curing of the ham, everything is done in harmony with nature.
The breeding region is the province of Huelva, in Andalusia, which produces the best hams in Spain.
