Description

An exceptional organic Iberian bellota ham

The Pata Negra Señorío de Montanera 100% organic, boneless, bellota-fed Iberian ham is produced from pure-bred Iberian pigs reared in the open air in the dehesas of the province of Badajoz, in south-western Spain. This region is renowned for the exceptional quality of its natural landscapes and for the production of fine Iberian hams.

Organic rearing in the dehesa

The Iberian pigs roam freely in the vast pastures of the dehesa, which are home to holm oaks and cork oaks. The pigs are reared in accordance with the principles of organic farming, in a protected environment where the animals enjoy plenty of space, fresh air and a natural diet.

The montanera and acorn-feeding

During the montanera, a crucial period in the Iberian pig’s rearing cycle, the animals feed mainly on acorns that have fallen from the oak trees, as well as on grasses and aromatic plants found in the pastures. Each pig can consume between 8 and 10 kg of acorns per day. This exceptional diet promotes the natural marbling of fat within the meat and contributes to the melt-in-the-mouth texture and complex flavours of bellota Iberian ham.

The benchmark: Señorío de Montanera

Señorío de Montanera is now recognised as one of the most prestigious producers of organic Iberian ham. The company brings together farmers specialising in the rearing of Iberian pigs and oversees the entire production process to guarantee a particularly high standard of quality.

A long, natural curing process

The hams are cured slowly in natural drying rooms for several years, between 36 and 48 months. This gradual curing allows a melt-in-the-mouth texture and a rich aromatic profile to develop, with delicate notes of dried fruit – characteristics of the finest bellota Iberian hams.
