The origins and tradition of Iberian ham

Montesierra’s 100% Iberian Bellota Pata Negra ham comes from pure-bred Iberian pigs reared in the open air in the dehesa landscapes of south-western Spain. During the montanera, the animals feed mainly on acorns that have fallen from oak trees and on natural resources found in these pastures. This diet directly contributes to the quality of the meat and the marbling characteristic of acorn-fed Iberian hams.

Slow curing in natural cellars

After salting, the hams are cured for an extended period in natural cellars where the climatic conditions allow the hams to mature gradually. This process develops a particularly melt-in-the-mouth texture and a complex aromatic profile for which bellota Iberian ham is renowned.
