A great Iberian tradition

The 80 g slice of Montesierra 100% Iberian Bellota Pata Negra shoulder comes from Iberian pigs reared in the dehesa landscapes of southern Spain. These natural pastures dotted with oak trees provide an ideal environment for the extensive rearing of Iberian pigs.

The montanera and acorn-feeding

During the montanera, the pigs feed mainly on acorns that have fallen from the oak trees, as well as on natural resources found in the pastures. Each animal can consume between 8 and 10 kg of acorns per day; this diet promotes the marbling of fat within the meat and contributes to the rich flavour of bellota Iberian products.

Natural curing

The shoulders are slowly cured in natural cellars for around 24 months. This gradual maturation develops a supple texture and a rich aromatic profile with delicate notes of dried fruit.
