The San Simón da Costa PDO guarantees an authentic product, produced in a specific area using traditional methods.
Local raw materials
This cheese is made from the milk of cows reared in Galicia, notably the Rubia Gallega, Pardo-Alpina and Friesland breeds.
Smoked over birch wood
Smoking with birch wood imparts a subtle and elegant aromatic note, typical of this cheese.
