The COVAP 100% Iberian Bellota Pata Negra “Alta Expresión Oro” DOP Valle de los Pedroches ham is made from pure-bred Iberian pigs reared free-range in the dehesas of Andalusia. Fed mainly on acorns during the montanera, they develop rich, flavourful meat. Slowly cured using traditional methods, this ham boasts a melt-in-the-mouth texture and aromas of great finesse.

An exceptional Iberian ham from the Valle de los Pedroches PDO
The COVAP 100% Iberian acorn-fed Pata Negra “Alta Expresión Oro” ham comes from purebred Iberian pigs registered in the herd book. This pedigree guarantees the quality of the meat, as well as the texture and flavour characteristic of the finest Iberian hams.
Rearing in the dehesas of Córdoba
The pigs are reared in the open in the dehesas of the Valle de los Pedroches, beneath centuries-old oak trees. This unique natural environment allows for extensive rearing in keeping with tradition and promotes exceptional meat quality.
A rich, natural diet
During the montanera, the animals feed on acorns, grasses and roots. This diet helps to enrich the meat with healthy fatty acids, particularly oleic acid, as well as antioxidants. It also promotes the marbling of fat within the meat and the development of the characteristic flavours of bellota Iberian ham.
The Los Pedroches PDO guarantee
This ham bears the Valle de los Pedroches Protected Designation of Origin (PDO), guaranteeing a product produced in accordance with strict criteria of quality, origin and authenticity.
A long curing process in natural bodegas
The ham is cured for over 36 months in natural bodegas. Depending on the size of the pieces and weather conditions, this curing period can extend to 48 months or more. This slow maturation allows a melt-in-the-mouth texture and complex flavours to develop.
Rigorous artisanal quality control
Each piece is inspected by master craftsmen who monitor the salting level, aroma and curing temperature to ensure the highest possible quality.
An award-winning ham
This ham was awarded 3 stars at the Superior Taste Award organised by the International Taste & Quality Institute. It was also recognised as the best “100% Ibérico DOP Los Pedroches Bellota Ham” (Encina de Oro), a testament to exceptional craftsmanship.
