Within the Jabugo PDO, the “SUMMUM” classification corresponds to the highest quality. To achieve this distinction, the ham must meet strict criteria relating to breed, rearing, diet, age and curing time.
A 100% Iberian pig reared free-range
This ham comes from pure-bred ‘pata negra’ Iberian pigs, reared free-range in the dehesas of the Sierra de Huelva. The animals thrive in a preserved natural environment, with low stocking densities, ensuring extensive rearing that respects traditional methods.
A diet consisting exclusively of acorns
During the montanera, the pigs feed exclusively on acorns and other natural resources found in the dehesa. This diet contributes to the marbling of the meat and the development of an exceptional aromatic richness.
Natural curing in the microclimate of Jabugo
The hams are slowly cured in the natural drying rooms of the Sierra de Jabugo. Opening and closing the windows allows humidity and temperature to be regulated naturally, without the need for artificial processes. This unique microclimate plays an essential role in the development of the flavours.
A unique taste experience
This ham is distinguished by its fine, melt-in-the-mouth flesh, perfectly distributed fat marbling and a supple texture that almost melts in the mouth. The flavours are complex and harmonious, with characteristic notes of dried fruit and hazelnut.
